Carrot Cake

Ingredients:

  • 3-4  medium-sized carrots (grated)
  • 1 cup of sugar 
  • Cinnamon powder or half teaspoon of nutmeg 
  • 1-2  cup of all-purpose flour (depending on how large you want it to be)
  • Half cup vegetable oil or olive oil (your choice)
  • 3-4 large eggs
  • 1 teaspoon of baking Powder or you can use half a teaspoon of baking Powder and half teaspoon of baking soda
  • Salt to taste 

Method:

Firstly in your mixing bowl add your eggs and sugar. Whisk or stir till it incorporates and fluffy. Gradually add your oil into the egg mixture and mix more.

Now add your nutmeg, salt and flour. Mix all together to form a batter. Thick or a bit light.(no problem) Add the grated carrots into the bitter and mix with a spoon or fork till it's well mixed.

Now place a baking sheet in your baking pan or just grease your pan with some vegetable oil. Pour in the batter into the baking pan and bake for 35-40 minutes in a preheated oven at 350dg.

Then check the middle of your cake with a toothpick. If in comes clean then you cake is done.
